Sylvester’s Burgers — a longtime San Luis Obispo County restaurant known for its juicy, loaded burgers served dripping with the restaurant’s signature sauce — has expanded to a new location.
And the opening is coinciding with a new menu expansion at Sylvester’s other locations.
The new restaurant, located at 1227 Pine St. in downtown Paso Robles, launched with a soft opening on April 1.
The expansion marks the fourth SLO County location for Sylvester’s since the brand was founded in Los Osos in 1988, owner Brian Englund said. Sylvester’s can also be found in Atascadero and Oceano.
But this time, there’s one notable difference — the Paso Robles restaurant will serve vegan and vegetarian cuisine off the menu of another SLO County restaurant favorite, expanding the burger joint appeal to another customer base.
The new Sylvester’s took over the spot in downtown Paso previously known as Ziggy’s, a plant-based restaurant that Englund partnered to open and ultimately bought out from a friend last year, he said.
And while Sylvester’s is known for its meaty meals, Englund said he wants to continue serving the vegan, vegetarian and gluten-free customer base that was so loyal to Ziggy’s — so he’s keeping the plant-based menu available at the new Sylvester’s location.
“We really do, you know, value our Ziggy’s customers,” he said.
Englund said he plans to eventually bring the hybrid model to other Sylvester’s locations as well, expanding access to Ziggy’s menu throughout the county.
The restaurant will continue to serve its signature options, including its free birthday burgers.
Englund is also exploring other paths for expansion at the new location, including a possible patio area connected to the spot since the space is smaller than his other restaurants, he told The Tribune.
He emphasized his desire to continue serving Paso by fundraising, sponsoring teams and offering deals, he said.
“We’re local, and we love the community,” he added.
Sylvester’s in Paso Robles is currently open Monday through Thursday from 11 a.m. to 8 p.m. and Fridays and Saturdays from 11 a.m. to 9 p.m, Englund said.
