Sylvester's Burgers Expands to Paso Robles

Sylvester's Burgers, a well-established San Luis Obispo County restaurant, has opened its fourth location in Paso Robles, California. This new restaurant marks a significant expansion for the brand, which was founded in Los Osos in 1988.

New Menu and Business Model

A key distinction of the Paso Robles location is the inclusion of a vegan and vegetarian menu. This menu hails from Ziggy's, a plant-based restaurant previously located in the same space. The owner, Brian Englund, acquired Ziggy's last year and has integrated its popular menu items into the new Sylvester's location. This move aims to cater to a broader customer base while also honoring Ziggy's loyal following. Englund plans to eventually incorporate this hybrid menu model into other Sylvester's locations.

Expansion and Community Engagement

The Paso Robles restaurant is situated in a smaller space compared to other Sylvester's locations, leading Englund to explore options like a potential patio area. He also highlights his commitment to community involvement by mentioning plans for fundraising and local sponsorships.

Operational Details

The Paso Robles Sylvester's is currently open Monday through Thursday from 11 a.m. to 8 p.m., and Fridays and Saturdays from 11 a.m. to 9 p.m. The restaurant will continue to offer its signature items, including free birthday burgers.
